My stepfather has started to can spicy pickles (I just picked up a new jar). He has a rather unique rating system. It consists of 5 stars.
1 Star - Mild
2 Stars - Medium
3 Stars - Hot
4 Stars - Will kill all pathogens
5 Stars - Will kill the host
I just picked up a 3 and a half star jar.

I can only do Mild, so Number 1. Even some Mild ones out there can have a kick to them. Now my husband LOVES spicy foods.
